Preparation
- Cover a baking sheet with parchment paper as a resting place for the Jello balls.
- In two medium mixing bowls, combine Lime Jello in one and Strawberry Jello in the other.
- Add 3/4 cup Greek yogurt to each bowl.
- Sprinkle 2 1/2 cups of desiccated coconut into each bowl.
- Gently mix the ingredients in each bowl until well combined, keeping the colors distinct.
- Prepare two small bowls with 3/4 cup coconut each for rolling the Jello balls.
- Roll tablespoon-sized portions of the red mixture into balls and coat them in the coconut, placing them on the prepared baking sheet.
- Repeat with the green mixture using the other bowl of coconut.
- Refrigerate the Jello balls uncovered for 4 hours until set.
Notes
To store, keep the Jello balls in an airtight container with layers of parchment to maintain freshness, for up to one week. Consider garnishing with more desiccated coconut when serving for added texture and visual appeal.
