Preparation
  1. In a large bowl, cream the softened butter and powdered sugar until smooth.
  2. Add the vanilla extract and mix until well combined.
  3. Gradually add the flour and salt, mixing gently until just combined.
  4. Fold in the chopped maraschino cherries and mini chocolate chips if using.
  5. Wrap the dough in plastic wrap and refrigerate for at least 1 hour.
Baking
  1. Preheat the oven to 325°F (165°C).
  2. Roll the chilled dough into bite-sized balls and place on parchment-lined baking sheets.
  3. Flatten each ball slightly with the bottom of a glass.
  4. Bake for 14-16 minutes until the edges are lightly golden.
  5. Cool slightly and dust with powdered sugar before serving.

Notes

Store cookies in an airtight container for up to a week. For longer storage, freeze and thaw when ready to serve. Dust with powdered sugar prior to serving for a festive touch.
