Preparation
- In a large bowl, cream the softened butter and powdered sugar until smooth.
- Add the vanilla extract and mix until well combined.
- Gradually add the flour and salt, mixing gently until just combined.
- Fold in the chopped maraschino cherries and mini chocolate chips if using.
- Wrap the dough in plastic wrap and refrigerate for at least 1 hour.
Baking
- Preheat the oven to 325°F (165°C).
- Roll the chilled dough into bite-sized balls and place on parchment-lined baking sheets.
- Flatten each ball slightly with the bottom of a glass.
- Bake for 14-16 minutes until the edges are lightly golden.
- Cool slightly and dust with powdered sugar before serving.
Notes
Store cookies in an airtight container for up to a week. For longer storage, freeze and thaw when ready to serve. Dust with powdered sugar prior to serving for a festive touch.
