Ingredients
  

Main Ingredients
  • 1 cup unsalted butter, room temperature Make sure butter is at room temperature for best results.
  • 1/2 cup powdered sugar
  • 1/2 tablespoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
Add-ins
  • 3/4 cup maraschino cherries, chopped Spread cherries on a paper towel to drain well, or use candied cherries.
  • 2/3 cup chocolate chips

Method
 

Preparation
  1. Beat the room temperature butter in a mixer along with the powdered sugar and vanilla until it’s light and fluffy.
  2. In a separate bowl, sift together the flour and salt, then gently knead them into the buttery mixture.
  3. Fold in the chopped cherries and chocolate chips until just combined.
  4. Shape the dough into a log, wrap it in cling film, and refrigerate for about an hour.
Baking
  1. Preheat your oven to 325°F (163°C).
  2. Cut the chilled dough into round cookies and place them on a baking sheet lined with parchment paper.
  3. Bake for about 15 minutes or until lightly golden. Let cool completely before removing from the baking sheet.

Notes

Store in an airtight container at room temperature for up to a week. Freeze any extra dough tightly for future use.
