Preparation
- Beat the room temperature butter in a mixer along with the powdered sugar and vanilla until it’s light and fluffy.
- In a separate bowl, sift together the flour and salt, then gently knead them into the buttery mixture.
- Fold in the chopped cherries and chocolate chips until just combined.
- Shape the dough into a log, wrap it in cling film, and refrigerate for about an hour.
Baking
- Preheat your oven to 325°F (163°C).
- Cut the chilled dough into round cookies and place them on a baking sheet lined with parchment paper.
- Bake for about 15 minutes or until lightly golden. Let cool completely before removing from the baking sheet.
Notes
Store in an airtight container at room temperature for up to a week. Freeze any extra dough tightly for future use.
