For the Cream Cheese Frosting
  • 8 oz 8 oz cream cheese, room temperature
  • 2 teaspoons 2 tsp vanilla
  • 4 cups 4 cups powdered sugar Fold in gradually for consistent texture.
  • Milk or heavy cream, to thin Use as needed for desired consistency.
  • Christmas sprinkles For decorative topping.

  • 1 pinch 1 pinch salt Optional if using unsalted butter.

Method
 

Preparation
  1. Preheat your oven to 350°F (180°C).
  2. In a mixing bowl, blend the softened butter and granulated sugar for about two minutes until light and fluffy.
  3. Add the eggs, cake batter flavoring, and pink food coloring, mixing until well combined.
  4. Gradually incorporate the all-purpose flour and baking powder until a smooth dough forms.
  5. Divide the dough into 3 Tbsp portions, roll into balls, and flatten slightly.
  6. Place the cookies on a parchment-lined or silicone mat.
Baking
  1. Bake for 9-11 minutes, watching for the cookies to puff and change to a matte finish.
Frosting
  1. For the frosting, whip together the softened butter, cream cheese, and vanilla until smooth.
  2. Gradually add the powdered sugar, adjusting with milk or heavy cream to reach the desired consistency.
Assembly
  1. Pipe the frosting onto the still-warm cookies and decorate with Christmas sprinkles.
