Ingredients
  

Filling
  • 1.5 cups mixed dried fruit (raisins, currants, sultanas)
  • 1 apple, peeled and diced
  • 1 lemon, zest and juice
  • 1 orange, zest and juice
  • 0.5 cups brown sugar
  • 0.25 cups brandy
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
Crust
  • 1 package pie crusts (store-bought or homemade)
  • Flour (for rolling out pie crusts)
  • 1 egg (for egg wash)

Method
 

Prepare Filling
  1. In a generous bowl, combine the mixed dried fruits with the diced apple, lemon zest and juice, and orange zest and juice.
  2. Stir in the brown sugar, brandy, cinnamon, and nutmeg.
  3. Allow this mixture to steep for at least an hour.
Preheat Oven
  1. Preheat your oven to 375°F (190°C).
Prepare Crust
  1. On a lightly floured surface, roll out the pie crust until it is thin.
  2. Cut out circles that will fit in muffin tins.
  3. Nestle each circle into the muffin tins.
Fill and Seal Pies
  1. Fill each pastry with the fruit mixture.
  2. Roll out additional crust to create caps for each pie and seal the edges.
  3. Cut a small slit on top of each pie.
  4. Brush the tops with the beaten egg wash.
Bake
  1. Bake in the preheated oven for 20-25 minutes or until golden brown.
Cool and Serve
  1. Allow to cool before serving.
  2. Serve warm with optional whipped cream or vanilla bean ice cream.

Notes

For a richer flavor, allow the fruit mixture to soak overnight. Personalize the filling with your choice of dried fruits and nuts. You can also experiment with different pie crusts.
