Method
Prepare Filling
- In a generous bowl, combine the mixed dried fruits with the diced apple, lemon zest and juice, and orange zest and juice.
- Stir in the brown sugar, brandy, cinnamon, and nutmeg.
- Allow this mixture to steep for at least an hour.
Preheat Oven
- Preheat your oven to 375°F (190°C).
Prepare Crust
- On a lightly floured surface, roll out the pie crust until it is thin.
- Cut out circles that will fit in muffin tins.
- Nestle each circle into the muffin tins.
Fill and Seal Pies
- Fill each pastry with the fruit mixture.
- Roll out additional crust to create caps for each pie and seal the edges.
- Cut a small slit on top of each pie.
- Brush the tops with the beaten egg wash.
Bake
- Bake in the preheated oven for 20-25 minutes or until golden brown.
Cool and Serve
- Allow to cool before serving.
- Serve warm with optional whipped cream or vanilla bean ice cream.
Notes
For a richer flavor, allow the fruit mixture to soak overnight. Personalize the filling with your choice of dried fruits and nuts. You can also experiment with different pie crusts.
