Preparation
  1. Gather all the ingredients in a vibrant, sunlit kitchen.
  2. In a large mixing bowl, whisk together the flour, baking powder, salt, and brown sugar.
  3. In another bowl, combine the milk, egg, vegetable oil, and melted butter. Whisk together.
  4. Pour the wet mixture into the dry ingredients and stir gently, being careful not to overmix.
  5. In a small bowl, combine 1 tablespoon of cinnamon with a bit of melted butter to create your cinnamon swirl mixture.
Cooking
  1. Preheat your skillet over medium heat and grease lightly with butter or oil.
  2. Pour about 1/4 cup of pancake batter onto the skillet and drizzle your cinnamon mixture in a swirly pattern on top.
  3. Cook until you see bubbles forming, then flip and let the golden side get toasty.
  4. In another bowl, mix the cream cheese, powdered sugar, vanilla extract, and a splash of milk until smooth.
