Ingredients
  

Crust
  • 2 bags Circus Animal Cookies, divided Each bag is 11 oz.
  • 1/4 cup melted butter
Filling
  • 1 box instant vanilla pudding mix 3.4 oz
  • 1 cup milk
  • 1 tub whipped topping, thawed 16 oz
  • 1/4 cup rainbow jimmie sprinkles
  • pink food coloring optional

Method
 

Preparation
  1. Line an 8x8 square pan with foil and spray it with cooking spray.
  2. Coarsely crush one package of Circus Animal Cookies in a food processor and mix with melted butter.
  3. Spread the mixture evenly in the pan and press down to create the crust.
Filling
  1. In a large bowl, whisk together instant vanilla pudding mix and milk until smooth.
  2. Add pink food coloring if desired, then fold in half of the thawed whipped topping.
  3. Pour the pudding mixture over the cookie crust and smooth it out.
  4. Spread the remaining whipped topping over the pudding layer.
Topping
  1. Crush Circus Animal Cookies from the second bag and sprinkle on top, along with rainbow jimmie sprinkles.
  2. Cover and chill in the fridge for at least 8 hours, preferably overnight.
Serving
  1. Lift the dessert from the pan using the foil edges and slice into squares.
  2. Serve on mismatched plates, optionally with a dollop of whipped cream.

Notes

Ensure whipped topping is fully thawed before mixing. You can substitute Circus Animal Cookies with other fun cookies or try different flavors of pudding for variety.
