Ingredients
  

Crust
  • 2 bags Circus Animal Cookies Each bag is 11 oz
  • 1/4 cup melted butter
Filling
  • 1 box instant vanilla pudding mix 3.4 oz
  • 1 cup milk Full-fat milk is recommended
  • 1 tub whipped topping 16 oz, thawed
  • 1/4 cup rainbow jimmie sprinkles Add right before serving
  • 1 drop pink food coloring Optional, add until desired color is reached

Method
 

Preparation
  1. Line an 8x8 square baking pan with foil, extending the sides over the edges. Lightly spray the foil with cooking spray and set aside.
  2. Process one package of Circus Animal Cookies in a food processor until coarsely crushed. Mix in the melted butter and process to combine.
  3. Spread the crust mixture evenly into the prepared baking pan and press down to form the crust. Set aside.
Make the Filling
  1. In a large bowl, whisk together the pudding mix powder and milk until well combined. Tint with pink food coloring if desired.
  2. Fold in half of the whipped topping until smooth. Pour the filling over the cookie crust and smooth the top.
Assembly
  1. Frost the pudding layer with the remaining whipped topping. Coarsely crush some remaining Circus Animal Cookies and sprinkle them on top. Garnish with more rainbow jimmie sprinkles.
  2. Cover and refrigerate for at least 8 hours, preferably overnight, before serving.

Notes

For best texture, chill overnight to let flavors meld. Avoid freezing as thawed whipped topping can affect texture.
