Ingredients
  

Dry Ingredients
  • 1 2/3 cups plain flour
  • 250 g caster sugar
  • 1 1/2 tsp baking powder
Wet Ingredients
  • 4 large eggs Weight should be 250g
  • 1-2 tbsp milk Add as needed
  • 2 tsp vanilla bean paste
  • 250 g salted butter, melted and cooled Ensure it is fully cooled before use

Method
 

Preparation
  1. Preheat your oven to 170°C (150°C for fan-forced). Grease and line a 21.5cm x 11.5cm loaf tin with baking paper.
  2. In a large bowl, whisk together the flour, sugar, and baking powder.
  3. Weigh the eggs in a medium bowl to ensure you have 250g, adding 1-2 tbsp of milk if needed.
  4. Add the vanilla bean paste to the eggs and whisk until smooth.
Mixing
  1. Create a well in your dry ingredients and pour in the egg mixture, whisking until entirely smooth.
  2. Gradually incorporate the cooled butter until fully combined.
Baking
  1. Pour the batter into your prepared tin and bake for 1 to 1 hour 5 minutes, or until a skewer inserted in the center comes out clean.
  2. Let the cake cool in the pan for 10 minutes before transferring to a wire rack.

Notes

Serve with whipped cream and fresh berries for a delightful treat. Store wraps tightly in plastic wrap or in an airtight container.
