Preparing the Gelatin
- Measure out 1 cup each of the reserved pineapple juice and cherry juice, adding just enough water to bring the total to 2 cups.
- In a saucepan, over medium-high heat, bring the juices to a low boil, then remove from heat and pour into a heat-safe bowl.
- Stir in the cherry gelatin until fully dissolved.
- Gently add the Coca Cola and allow to cool before refrigerating for 30 minutes.
Combining Ingredients
- Fold in the crushed pineapple, dark cherries, and chopped walnuts into the gelatin mixture.
- Spoon the mixture into a trifle bowl and cover with plastic wrap.
- Refrigerate for at least 4 hours or overnight.
Preparing the Topping
- Beat the cream cheese until smooth, then fold in the whipped topping until well combined.
- Spoon the cream cheese mixture over the set gelatin and garnish with maraschino cherries.
Serving
- Serve the Coca Cola Trifle chilled, allowing guests to savor each layer.
