Ingredients
  

Fruit and Juices
  • 20 ounces crushed pineapple, drained but juice reserved
  • 15 ounces pitted dark sweet cherries in heavy syrup, drained but juice reserved
  • 1 cup reserved pineapple juice
  • 1 cup reserved cherry juice (combined with water) Add water to bring total to two cups of juice
Gelatin Mixture
  • 6 ounces cherry flavored gelatin (two 3-ounce packages)
  • 8 ounces Coca Cola
Cream and Topping
  • 4 ounces cream cheese, softened Ensure at room temperature
  • 8 ounces thawed whipped topping
Miscellaneous
  • 1 cup chopped walnuts
  • Maraschino cherries, drained and patted dry For garnish

Method
 

Preparing the Gelatin
  1. Measure out 1 cup each of the reserved pineapple juice and cherry juice, adding just enough water to bring the total to 2 cups.
  2. In a saucepan, over medium-high heat, bring the juices to a low boil, then remove from heat and pour into a heat-safe bowl.
  3. Stir in the cherry gelatin until fully dissolved.
  4. Gently add the Coca Cola and allow to cool before refrigerating for 30 minutes.
Combining Ingredients
  1. Fold in the crushed pineapple, dark cherries, and chopped walnuts into the gelatin mixture.
  2. Spoon the mixture into a trifle bowl and cover with plastic wrap.
  3. Refrigerate for at least 4 hours or overnight.
Preparing the Topping
  1. Beat the cream cheese until smooth, then fold in the whipped topping until well combined.
  2. Spoon the cream cheese mixture over the set gelatin and garnish with maraschino cherries.
Serving
  1. Serve the Coca Cola Trifle chilled, allowing guests to savor each layer.

Notes

Best enjoyed fresh. Store in the refrigerator covered for up to 3 days. For added depth, consider layering with crushed cookies or cake.
