Preparation
- Cream the butter until it's soft and fluffy.
- Add the sugar and whisk until creamy.
- Introduce the sifted flour, salt, baking powder, and milk to form a biscuit dough.
- Fold in the dessicated coconut.
- Roll out the dough on a floured surface, score with a fork, and cut out shapes with a biscuit cutter.
- Make a notch in each biscuit.
Baking
- Place on a greased baking tray and bake in a preheated oven at 200 degrees Celsius for about 12-15 minutes.
- Once cooled, melt the white chocolate to sandwich the biscuits together.
Notes
Store biscuits in an airtight container at room temperature. Best enjoyed within a week. For extra flavor, consider adding cinnamon or nutmeg to the dough, or swapping white chocolate for dark chocolate.
