Ingredients
  

Biscuit Ingredients
  • 250 grams Butter or Margarine Make sure at room temperature for best results.
  • 1 cup Sugar
  • 2 cups Cake flour Alternatively, use homemade cake flour.
  • 1 tsp Baking powder
  • 1/2 tsp Salt
  • 1 tsp Vanilla essence
  • 3 tbsp Milk Use a vegan alternative for a vegan version.
  • 1 and 1/2 cups Dessicated coconut Can substitute with chopped pecans or walnuts.
Filling Ingredients
  • 200 grams White chocolate Melt to sandwich between biscuits.

Method
 

Preparation
  1. Cream the butter until it's soft and fluffy.
  2. Add the sugar and whisk until creamy.
  3. Introduce the sifted flour, salt, baking powder, and milk to form a biscuit dough.
  4. Fold in the dessicated coconut.
  5. Roll out the dough on a floured surface, score with a fork, and cut out shapes with a biscuit cutter.
  6. Make a notch in each biscuit.
Baking
  1. Place on a greased baking tray and bake in a preheated oven at 200 degrees Celsius for about 12-15 minutes.
  2. Once cooled, melt the white chocolate to sandwich the biscuits together.

Notes

Store biscuits in an airtight container at room temperature. Best enjoyed within a week. For extra flavor, consider adding cinnamon or nutmeg to the dough, or swapping white chocolate for dark chocolate.
