Ingredients
  

Base
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
Coconut Layer
  • 1 cup shredded coconut Use sweetened shredded coconut for best flavor.
  • 1 cup sweetened condensed milk
Chocolate Topping
  • 1 cup semi-sweet chocolate chips Can substitute with milk or dark chocolate if preferred.
  • 1 tablespoon coconut oil Can substitute with neutral oil or butter.

Method
 

Preparation
  1. Preheat your oven to 350 degrees F (175 degrees C) and line an 8x8 inch baking pan with parchment paper.
  2. In a mixing bowl, combine the flour, melted butter, and granulated sugar, stirring until crumbly. Press this mixture into the bottom of the prepared pan.
First Bake
  1. Bake for 10-12 minutes until lightly golden.
Coconut Layer
  1. In another bowl, mix together the shredded coconut and sweetened condensed milk. Spread this mixture over the baked base.
  2. Bake for another 15-18 minutes until the coconut layer is set and slightly golden. Remove and let cool completely.
Chocolate Topping
  1. In a microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 30-second intervals until melted and smooth.
  2. Pour over the cooled coconut layer and spread evenly.
  3. Refrigerate for at least an hour until the chocolate is firm.
Serving
  1. Cut into bars and enjoy!

Notes

Store in an airtight container in the refrigerator for up to a week. For added flavor, consider sprinkling extra coconut or drizzling additional chocolate on top.
