  • 1 Cup Plain White Flour
  • 1 teaspoon Baking Powder
  • 1/2 Cup White Sugar
  • 2 Tablespoons Cocoa Powder
  • 1/2 Cup Desiccated Coconut
  • 135 grams Butter, Melted
Icing Ingredients
  • 1 Cup Desiccated Coconut (for icing)
  • 2 Tablespoons Cocoa Powder (for icing)
  • 1 Cup Icing Sugar
  • 25 grams Butter, Melted (for icing)
  • 1/2 Tin Condensed Milk
  • 1/2 teaspoon Vanilla
  • 1 Tablespoon Boiling Water (optional) Use if icing is too soft

Method
 

Preparation
  1. Preheat your oven to 180°C and prepare a 23 x 23 cm slice tin with baking paper lining the base and sides.
  2. In a medium bowl, combine plain white flour, baking powder, sugar, cocoa powder, and half the desiccated coconut.
  3. Pour the melted butter into the mixture and stir until well combined.
  4. Spoon the mixture into the prepared tin and press evenly to form a base.
Baking
  1. Bake for 15 minutes and then let it cool in the tin.
Icing
  1. In a separate bowl, whisk together the remaining desiccated coconut, cocoa powder, and icing sugar.
  2. Add melted butter, condensed milk, and vanilla, stirring until smooth. If the icing is too soft, add boiling water gradually until desired consistency is reached.
  3. Spread the icing over the cooled slice using a warmed knife.
  4. Refrigerate until set, then cut into squares and store in an airtight container.

Notes

For an extra decadent touch, consider adding finely chopped dark chocolate to the mixture. Ensure ingredients are at room temperature for better mixing.
