Preparation
- Preheat your oven to 350°F (175°C).
- Crush chocolate cookies and mix with melted butter to create the crust.
- Press the mixture firmly into the bottom of a springform pan.
Making the mousse
- In a mixing bowl, beat cream cheese and powdered sugar until smooth.
- In another bowl, whip heavy cream with vanilla extract until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture.
Assembly
- Pour the mousse over the prepared cookie crust and spread evenly.
- Freeze for at least 4 hours or until set.
- Before serving, sprinkle with crushed cookies.
Notes
Use room temperature cream cheese for a smoother filling. Add chocolate chips or mini marshmallows for extra delight. Store tightly wrapped in the freezer for up to a week.
