Ingredients
  

For the crust
  • 1 package chocolate cookies Crushed into crumbs
  • 1/2 cup butter, melted
For the mousse filling
  • 2 cups heavy cream
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 8 ounces cream cheese, softened Best at room temperature
  • 1 cup crushed cookies for garnish To sprinkle on top before serving

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Crush chocolate cookies and mix with melted butter to create the crust.
  3. Press the mixture firmly into the bottom of a springform pan.
Making the mousse
  1. In a mixing bowl, beat cream cheese and powdered sugar until smooth.
  2. In another bowl, whip heavy cream with vanilla extract until stiff peaks form.
  3. Gently fold the whipped cream into the cream cheese mixture.
Assembly
  1. Pour the mousse over the prepared cookie crust and spread evenly.
  2. Freeze for at least 4 hours or until set.
  3. Before serving, sprinkle with crushed cookies.

Notes

Use room temperature cream cheese for a smoother filling. Add chocolate chips or mini marshmallows for extra delight. Store tightly wrapped in the freezer for up to a week.
