  • 140 grams shredded coconut Use fresh for best flavor.

Preparation
  1. Preheat your oven to 180°C (350°F).
  2. In a bowl, mix together the sugar and shredded coconut.
  3. Add the eggs to the mix and stir well until you have a smooth dough.
  4. Scoop out small portions of the dough and roll them into ball shapes.
  5. Place the balls on a baking sheet and bake for 15-20 minutes, or until golden brown.
  6. Allow them to cool before serving.

Notes

Store in an airtight container at room temperature for up to a week, or in the fridge for about two weeks. For variations, consider adding lime zest or dipping in melted chocolate.
