Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, blend together cottage cheese, flour, baking powder, and salt until well combined.
  3. Stir in the diced tomatoes, shredded cheese, egg, and chopped herbs to create a colorful mixture.
  4. Scoop tablespoons of the mixture onto a greased baking sheet.
Baking
  1. Slide the baking sheet into the oven and let them bake for 20-25 minutes until golden brown.
  2. Let cool for a few minutes before serving.

Notes

Serve with zesty salsa or creamy dipping sauce. Store leftovers in an airtight container in the fridge for 2-3 days. Reheat in the oven for best results.
