For the Bars
  • 1 cup unsalted butter Melted
  • 1.5 cups brown sugar Packed
  • 2 pieces eggs
  • 2 tsp orange zest
  • 1.5 tsp vanilla extract
  • 0.25 tsp ground ginger
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 2.125 cups all-purpose flour
  • 1 cup white chocolate chips
  • 0.75 cup dried cranberries
For the Frosting
  • 8 oz cream cheese Softened
  • 1.5 to 2 cups powdered sugar To taste
  • 0.25 tsp vanilla extract For frosting
  • 0.5 cup dried cranberries Chopped, for frosting
  • 0.5 cup melted white chocolate chips For frosting

Method
 

Preparation
  1. Preheat the oven to 350°F and line a 9x13 inch baking dish with parchment paper.
  2. In a small pot, melt the butter over low heat.
  3. In a large bowl, blend the brown sugar with the melted butter.
  4. Add eggs, orange zest, and vanilla extract and whisk until smooth.
  5. In a separate bowl, whisk together ground ginger, baking powder, salt, and flour.
  6. Gradually incorporate the dry mixture into the wet ingredients until just combined.
  7. Fold in white chocolate chips and dried cranberries.
  8. Spread the batter evenly in the prepared baking pan and bake for 22 to 24 minutes.
Frosting
  1. While the bars cool, beat the cream cheese until smooth.
  2. Add powdered sugar and vanilla extract, mixing until combined.
  3. Frost the cooled bars with cream cheese mixture, then sprinkle with chopped cranberries and drizzle with melted white chocolate.
  4. Slice into squares and serve.

Notes

For best results, ensure butter and cream cheese are at room temperature. Allow bars to cool completely before frosting.
