  • 2 tablespoons soy sauce Use low-sodium soy sauce if desired.
  • 2 tablespoons olive oil For cooking.
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional) Adds color and freshness.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken breasts generously on both sides with salt, pepper, and garlic powder.
  3. In a large oven-safe skillet, heat the olive oil over medium-high heat and sear the chicken breasts for about 5 minutes on each side until golden brown.
  4. In a separate bowl, combine the cranberries, orange juice, orange zest, honey, soy sauce, and Dijon mustard. Mix well.
Cooking
  1. Pour the glaze over the seared chicken breasts in the skillet.
  2. Transfer the skillet to the preheated oven and bake for 25-30 minutes, ensuring the internal temperature of the chicken reaches 165°F (75°C).
  3. Baste the chicken halfway through with the glaze.
Finishing
  1. Let the chicken rest for about 5 minutes before slicing.
  2. Garnish with fresh parsley before serving.

Notes

Marinate the chicken in the glaze for a few hours before cooking for added depth of flavor. Serve with rice, mashed potatoes, or roasted vegetables.
