Ingredients
  

Turkey and Glaze
  • 1 piece turkey breast A 3-4 lb turkey breast is recommended.
  • 1 cup fresh cranberries Can be substituted with frozen cranberries, thawed.
  • 1/2 cup orange juice Can be substituted with apple juice or chicken broth.
  • 1/4 cup brown sugar Packed brown sugar for better flavor.
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • to taste Salt and pepper Adjust according to preference.
  • 1 tablespoon olive oil

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a saucepan, combine cranberries, orange juice, brown sugar, soy sauce, garlic powder, salt, and pepper. Cook over medium heat until the cranberries burst and the mixture thickens.
  3. Rub the turkey breast with olive oil, salt, and pepper.
Cooking
  1. Place the turkey in a roasting pan and brush with the cranberry-orange glaze.
  2. Roast in the oven for about 1.5 hours, or until the internal temperature reaches 165°F (75°C), basting occasionally with the glaze.
  3. Let the turkey rest for 10-15 minutes before slicing and serving.

Notes

Baste the turkey with the glaze several times during roasting for extra flavor. For a richer flavor, marinate the turkey with the glaze in the fridge for a few hours before roasting.
