Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy.
- Add in the orange zest and vanilla extract, stirring until blended.
- Gradually mix in the flour until just combined, then gently fold in the chopped cranberries.
- Scoop tablespoons of dough onto a baking sheet lined with parchment paper, making sure to give them room to spread.
- Bake for around 12-15 minutes or until the edges are lightly golden.
- Let them cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
Serve alongside tea or coffee, or as part of a holiday cookie platter. Store in an airtight container at room temperature for up to a week, or freeze in a zip-lock bag.
