Cake Batter

  • 150 g 150g sugar Granulated sugar
  • 250 g 250g flour 00 All-purpose flour
  • 100 ml 100ml milk Whole milk recommended
  • 80 ml 80ml seed oil Vegetable oil or sunflower oil
  • 1 pack 1 pack (16g) dessert yeast
  • Grated lemon zest From 1 lemon
Filling and Topping
  • 400 g 400g Crema Pasticcera Ready and cold
  • 2 2 apples Sliced thinly
  • a handful A handful of walnut shells
  • Powdered sugar To taste
  • Honey or maple syrup For final decoration

Method
 

Dough Preparation
  1. Begin by beating the eggs with the sugar until light and bubbly.
  2. Gradually add oil and milk while stirring.
  3. Incorporate sifted flour, dessert yeast, and lemon zest to create a batter.
First Cooking
  1. Line a 22×22 cm pan with baking paper, pour in half the batter, and bake at 180°C for 15 minutes.
Filling
  1. Spread crema pasticcera on the baked base and layer with thin apple slices.
Second Cooking
  1. Pour the remaining batter over the apples and sprinkle walnut shells on top.
Last Step
  1. Return to the oven and bake for 20-25 minutes, checking doneness with a skewer.
Serve
  1. Allow to cool completely, dust with powdered sugar, and drizzle with honey or maple syrup before slicing and serving with tea or coffee.

Notes

This cake can be served warm or at room temperature. For variations, consider adding cinnamon to the apple layers or using pecans instead of walnuts. Can be stored in an airtight container for up to three days or refrigerated for longer storage.
