Ingredients
  

Pastry and Filling
  • 1 sheet frozen puff pastry, thawed in the fridge
  • 1 cup frozen chopped spinach, thawed and wrung very dry Remove as much moisture as possible.
  • 4 ounces cream cheese, softened
  • 1 small clove garlic, grated or finely minced
  • 2 tablespoons grated Parmesan or Pecorino
  • 2 tablespoons shredded mozzarella (optional) Add for extra creaminess.
  • 1 pinch red pepper flakes or black pepper
  • 1 large egg, beaten with 1 teaspoon water for egg wash
  • 1 pinch salt, to taste Adjust according to preference.

Method
 

Preparation
  1. Squeeze the thawed spinach in a clean towel until it is nearly dry.
  2. In a bowl, mix cream cheese, spinach, garlic, Parmesan, mozzarella (if using), and a pinch of pepper. Salt to taste. The mixture should be thick and scoopable.
  3. Unfold the puff pastry on a lightly floured surface. Roll it out slightly if needed.
  4. Cut the pastry into 9 or 12 squares and place about a tablespoon of filling in the center of each square.
  5. Brush the edges with egg wash, fold to seal, and crimp if desired.
  6. Brush the tops with egg wash and chill in the refrigerator for 10 minutes.
Baking
  1. Preheat oven to 400°F (204°C).
  2. Bake for 14 to 18 minutes until golden brown.
  3. Let sit for 3 minutes before serving.

Notes

Serve warm with yogurt-dill dip or spicy mustard. Store leftovers in the fridge for up to 3 days. Reheat in a 350°F oven for 8-10 minutes. For freezing, bake then freeze or freeze unbaked puffs.
