  • 1/4 cup chia seeds
  • 1 large lemon, zest Zest of the lemon for flavor.
  • 1 large lemon, juice Freshly squeezed lemon juice.
  • 1-2 tbsp maple syrup or honey Adjust sweetness to taste.
  • 1/2 tsp vanilla extract
  • 1/4 cup Greek yogurt or coconut yogurt Use Greek yogurt for creaminess or coconut yogurt for a dairy-free option.
Garnish
  • Lemon zest curls For garnish before serving.

Preparation
  1. In a medium mixing bowl, whisk together the milk, lemon juice, lemon zest, maple syrup, vanilla extract, and yogurt until smooth.
  2. Stir in the chia seeds, making sure they are well incorporated and free of clumps.
  3. Let the mixture sit for 5 minutes and then whisk again to redistribute the chia seeds.
  4. Cover the bowl and place it in the refrigerator for at least 4 hours or overnight until it thickens into a creamy pudding.
Serving
  1. Before serving, give the pudding a gentle stir and spoon it into jars or dessert cups.
  2. Garnish with fresh curls of lemon zest or a drizzle of honey.

Store in the refrigerator covered for up to five days. Consider adjusting sweetness and experimenting with different yogurt types for desired creaminess.
