Method
Roasting
- Preheat your oven to 180°C. Take your peeled garlic cloves and place them in a small baking dish, scatter the sesame seeds and tuck in the rosemary sprig, then cover everything with olive oil.
- Pop it in the oven and let it roast for about 25–30 minutes, until they are soft, golden, and give off a tantalizing aroma.
Combining
- Once the garlic is ready, transfer those delicious cloves and toasty sesame seeds into a mixing bowl. Add in the cream cheese, mayonnaise, Parmesan, honey, lemon juice, chopped chives, salt, and a sprinkle of chili flakes.
Mashing
- Using a fork, start mashing everything together until it's smooth but feel free to keep a bit of that rustic texture.
Serving
- Spoon the mixture into a serving bowl. Top it with garlic confit cloves, a sprinkle of fresh chives, a dash of chili flakes, and a drizzle of reserved garlic-sesame oil.
Notes
This dip can be stored in an airtight container in the fridge for up to a week. The flavors only get richer with time! Before serving, give it a quick stir and a little touch-up with fresh chives if desired.
