Preparation
  1. Preheat the oven to 375 degrees F (190 degrees C).
  2. Line a baking sheet with parchment paper or lightly spray with nonstick spray.
  3. In a mixing bowl, combine shredded cheddar, shredded mozzarella, chopped dill pickles, and garlic powder.
  4. Add breadcrumbs for crunch if desired and mix thoroughly.
  5. Form the cheese mixture into small balls or bite-sized portions and place on the prepared baking sheet with space between them.
Baking
  1. Bake for 10 minutes until golden brown and crispy.
  2. Remove from the oven and allow the bites to cool slightly before serving.

Notes

For added spice, drizzle with hot sauce before serving. Store in an airtight container in the refrigerator for up to 3 days. Re-crisp gently in a 350°F (175°C) oven for 5–7 minutes.
