Ingredients
  

For the shrimp filling
  • 1 lb shrimp, peeled and deveined
  • 1 cup shredded mozzarella cheese
  • 1/2 cup cream cheese, softened
  • 2 cloves garlic, minced
  • 2 tbsp chopped parsley
  • 1 tsp paprika
  • Salt & pepper to taste
For the coating
  • 1 cup all-purpose flour
  • 2 eggs beaten
  • 1 cup breadcrumbs, panko preferred Panko gives a lighter crust.
  • Oil for frying Use for frying until crispy.

Preparation
  1. In a bowl, mix chopped shrimp, mozzarella, cream cheese, garlic, parsley, paprika, salt, and pepper until smooth.
  2. Scoop small portions and roll into bite-sized balls.
  3. Dip each ball into flour, then egg, then breadcrumbs.
Cooking
  1. Heat oil to medium-high and fry bites until golden brown, about 2–3 minutes.
  2. Drain on paper towels and sprinkle with parsley.

Notes

These bites are best served immediately to enjoy the contrast between crisp and molten. Consider serving them with lemon wedges and a dipping sauce like aioli or herbed yogurt. For storage, refrigerate leftovers for up to 24 hours, separating with parchment to preserve crust. Re-crisp in an oven at 350°F for 8–10 minutes.
