Main Ingredients
  • 1.5 cups pitted Medjool dates Choose juicy and plump dates for best results.
  • 3/4 cup raw almonds Toast lightly if desired.
  • 1/2 cup rolled oats Lightly toasting can enhance flavor.
  • 1/3 cup cocoa powder
  • 2 Tbsp almond butter Can substitute with tahini for a different flavor.
  • 1 tsp vanilla extract
  • 1 pinch salt
Optional Toppings
  • cacao, shredded coconut, or chopped nuts Use as desired for coating.

Method
 

Preparation
  1. Soften dates if needed by soaking them in warm water for 10 minutes, then drain and pat dry.
  2. Toast nuts lightly if desired and allow to cool.
  3. Process the nuts in a food processor until crumb-like.
  4. Add the pitted dates and process to form a paste. If dry, add water or nut butter gradually.
  5. Mix in cocoa powder and salt, then add rolled oats and almond butter until a cohesive mixture forms.
  6. Scoop uniform portions about one tablespoon in size and roll into balls.
  7. Optionally coat with toppings like cocoa or coconut.
  8. Refrigerate for 20-30 minutes to set or enjoy immediately.

Notes

For best texture, use juicy Medjool dates and mix until you achieve a paste with texture; add water if too dry.
