These easy, chewy date caramels are made with just four ingredients and are perfect for sharing or enjoying with coffee or tea.

  • 1 cup Medjool Dates, pitted Use soft Medjool dates for the best texture
  • 2 tablespoons Almond Butter (or sunflower seed butter for nut free) Swap for nut-free option
  • 1 tablespoon Coconut Oil, melted Essential for blending
  • 1 cup Chocolate Chips (or chocolate bar, preferably dark chocolate) Use dairy-free chocolate chips for vegan option
  • 2 teaspoons Coconut Oil To mix with chocolate chips

Method
 

Preparation
  1. Soak the pitted Medjool dates in hot water for about 10 minutes.
  2. Drain the soaked dates and blend them with almond butter and melted coconut oil until smooth.
  3. Transfer the mixture to a lined 9 by 5 inch loaf pan and freeze for 2 to 3 hours.
  4. Once firm, slice the caramel into 12 squares.
Coating
  1. Melt the chocolate chips with coconut oil in a microwave safe bowl.
  2. Dip each caramel square into the melted chocolate and place on a lined plate.
  3. Refrigerate for 1 hour until the chocolate is set.
  4. Optional: Sprinkle with sea salt before the chocolate sets for extra flavor.

Notes

Keep them in an airtight container in the refrigerator for up to two weeks. For freezing, layer with parchment paper and freeze up to three months — thaw for a few minutes on the counter before enjoying.
