Ingredients
  

Crumble Base
  • 170 g all-purpose flour
  • 80 g brown sugar
  • 1 pinch salt
  • 90 g cold unsalted butter cut into small pieces
Fig Compote
  • 400 g dried figs cleaned and cut
  • 1 cup water
  • 40 g granulated sugar
  • 3 tbsp fresh lemon juice
Cream Cheese Layer
  • 170 g cream cheese
  • 1 tsp vanilla extract
  • 1 large egg
  • 40 g sugar

Method
 

Preparation
  1. In a mixing bowl, combine the flour, brown sugar, a pinch of salt, and cold unsalted butter. Rub the butter into the dry ingredients using your fingertips until the mixture resembles coarse crumbs.
  2. Grease or line a 20x30 cm baking pan and press the crumble dough evenly over the bottom to form a solid base.
  3. In a saucepan, cook cleaned and cut dried figs with water and sugar for 5 minutes. Blend with lemon juice until smooth.
  4. Spread the blended fig mixture evenly over the prepared base.
  5. Beat cream cheese with sugar, vanilla extract, and egg until smooth.
Baking
  1. Pour the cream cheese mixture over the fig layer and bake in a preheated oven at 180°C (356°F) for 30 minutes. Allow to cool completely before slicing into bars.

Notes

Serve at room temperature with a dusting of powdered sugar, or accompanied by yogurt or crème fraîche. Allow to warm to room temperature after refrigerating for best texture.
