Preparation
  1. Start by freezing the marshmallows so they stay firm when they hit the hot oil.
  2. Heat your oil until it's hot enough for frying — about 350°F (175°C).

  4. In another bowl, combine the pancake mix, then pour in the wet ingredients, stirring gently until you get a thick batter.
Frying
  1. Coat the frozen marshmallows in the batter.
  2. Drop them into the hot oil, frying until golden brown while turning once.
  3. Let them rest on paper towels, then serve warm, dusted with powdered sugar or loaded with whipped cream, chocolate sauce, and sprinkles.
