  • 1 whole egg
  • 1 yolk egg
  • 4 tablespoons butter, melted For greasing the muffin tin.

  • 1 teaspoon baking powder
  • 1 cup flour

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Grease a 12-cup muffin tin with melted butter.
  3. In a mixing bowl, combine the cooled mashed potatoes, milk, one whole egg, and one yolk.
  4. Add melted butter and whisk until smooth.
  5. Stir in the shredded sharp cheddar cheese and optional chopped green onions.
Baking
  1. In a separate bowl, mix together the flour and baking powder.
  2. Gently fold the dry mixture into the potato batter until just combined.
  3. Fill each muffin cup nearly to the brim with the potato mixture using a 1/4 cup measure.
  4. Bake for approximately 45 minutes, or until the tops are golden and set.

Notes

For the best texture, use well-seasoned, creamy mashed potatoes. You can add crumbled bacon for a smoky flavor. Try varying the cheese or adding herbs for a personal touch.
