Ingredients
  

For the crust
  • 1 1/2 cups crushed graham crackers
  • 1/4 cup granulated sugar
  • 1/3 cup unsalted butter, melted
For the cheesecake filling
  • 2 packages (8 oz) cream cheese, softened
  • 2/3 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon zest
  • 1/4 cup lemon juice
  • 1/4 cup lemon curd

Method
 

Preparation
  1. Preheat oven to 325°F (163°C). Grease an 8×8-inch baking dish.
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined. Press firmly into the bottom of the pan.
  3. Bake crust for 10 minutes, then let cool slightly.
Making the Filling
  1. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing after each.
  2. Stir in vanilla, lemon zest, and lemon juice until creamy.
  3. Pour the filling over the cooled crust and smooth evenly.
  4. Drop spoonfuls of lemon curd over the filling and gently swirl with a toothpick or knife.
Baking
  1. Bake for 35–40 minutes, or until the center is just set.
  2. Let cool at room temperature, then refrigerate for at least 3 hours before slicing and serving.

Notes

Slice into neat squares and serve chilled. Garnish with a thin lemon slice, a dusting of powdered sugar, or a few fresh berries for contrast. The bars also pair beautifully with mint tea or a crisp Prosecco.
