Cookie Base Ingredients
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened Ensure it’s at room temperature
  • 1/2 cup granulated sugar
Cheesecake Filling Ingredients
  • 8 oz cream cheese, softened Ensure it’s at room temperature
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 large egg Ensure it’s at room temperature
  • 1/2 cup holiday-themed sprinkles (optional) For garnish

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. In a bowl, combine flour, baking powder, and salt.
  3. In another bowl, cream the softened butter and granulated sugar until light and fluffy.
  4. Gradually mix the flour mixture into the butter mixture until combined.
  5. Press cookie dough into the bottom of each muffin cup.
Making the Filling
  1. In a separate bowl, beat together cream cheese, powdered sugar, vanilla extract, and egg until smooth.
  2. Pour the cream cheese mixture over the cookie bases in the muffin tin.
Baking
  1. Bake for 15 to 18 minutes, until edges are golden and centers are set.
  2. Remove from the oven and let cool.
Serving
  1. Sprinkle with holiday-themed sprinkles before serving.
  2. Serve warm or at room temperature.

Notes

Store in an airtight container in the refrigerator for up to four days. Can be frozen for up to three months.
