Ingredients

Dry Ingredients
  • 1.5 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 0.5 teaspoon salt
Wet Ingredients
  • 1.25 cups whole milk
  • 1 large egg
  • 3 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
Mix-ins and Toppings
  • 1 cup fresh or frozen blueberries
  • 0.5 cup whipped cream or sweetened cream cheese optional
  • Maple syrup or honey for drizzling

Method

Preparation
  1. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  2. In another bowl, mix together whole milk, egg, melted butter, and vanilla extract until smooth.
  3. Pour the wet mixture into the dry ingredients and stir gently to keep the fluffiness intact.
  4. Fold in the blueberries carefully.
Cooking
  1. Heat a nonstick skillet over medium heat and lightly grease it.
  2. Scoop about 1/4 cup of pancake batter onto the skillet.
  3. Cook until bubbles appear and edges are set, then flip and cook until golden.
  4. Once pancakes cool slightly, spread whipped cream or cream cheese on one and sandwich with another pancake.
  5. Drizzle with maple syrup or honey.

Notes

For extra fluffiness, let the batter rest for a few minutes before cooking. Use a heavy skillet for even cooking. Feel free to experiment with toppings like bananas or nuts.
