  • 1 can 20 oz crushed pineapple, drained Drain thoroughly to avoid a watery salad.
  • 1 can 14 oz sweetened condensed milk Adjust the amount to reduce sweetness if desired.
  • 1/4 cup lemon juice Adds brightness and balances sweetness.
  • 1 tub 8 oz whipped topping, thawed Keep chilled for best texture.
  • 1 jar 10 oz maraschino cherries, drained and halved Use whole cherries for garnish.
  • 2 cups mini marshmallows Fold gently to maintain texture.
  • 1 cup shredded coconut (optional) Toast lightly for added flavor if desired.
  • as needed for garnish Whipped cream Fresh whipped cream for serving.

Preparation
  1. In a large mixing bowl, combine the drained crushed pineapple, sweetened condensed milk, and lemon juice. Mix well until all ingredients are thoroughly combined.
  2. Gently fold in the whipped topping until the mixture is smooth and creamy.
  3. Add the halved maraschino cherries, mini marshmallows, and shredded coconut (if using). Stir until all ingredients are evenly distributed.
  4. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or until the salad is well chilled and set.
Serving
  1. Before serving, give the salad a gentle stir.
  2. Spoon the salad into crystal bowls or stemmed glasses and garnish with whipped cream and a whole maraschino cherry.

Notes

Keep everything chilled for best texture. Drain pineapple thoroughly to prevent the salad from becoming watery.
