Preparation
- Preheat the oven to 450 degrees F.
- In a mixing bowl, beat the egg whites, salt, and cream of tartar on medium speed until frothy.
- Gradually add the granulated sugar one spoonful at a time, continuing to beat until stiff, glossy peaks form.
- Stir in the vanilla and almond extracts.
- Spread the mixture evenly into a prepared tube pan.
- Place the pan in the oven and turn the oven off. Leave the torte to sit overnight.
Finishing
- The next morning, run a knife along the edges of the pan and unmold the torte onto a serving dish.
- Whip the cream, sugar, and vanilla bean paste together until light and fluffy, then spread over the cooled torte.
- Garnish with orange zest if desired.
Notes
Store any leftovers wrapped in the refrigerator. Allow to sit at room temperature before serving to maintain texture.
