Ingredients
  

For the Torte
  • 6 pieces egg whites at room temperature Ensure they are at room temperature for best results.
  • 1/4 teaspoon salt
  • 1/2 teaspoon cream of tartar
  • 1 1/2 cups granulated sugar Add gradually to the egg whites.
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon almond extract
For the Whipped Cream Topping
  • 1 cup heavy cream
  • 1 teaspoon vanilla bean paste
  • 1 tablespoon granulated sugar
  • 1 tablespoon zest of an orange Optional, for garnish.

Method
 

Preparation
  1. Preheat the oven to 450 degrees F.
  2. In a mixing bowl, beat the egg whites, salt, and cream of tartar on medium speed until frothy.
  3. Gradually add the granulated sugar one spoonful at a time, continuing to beat until stiff, glossy peaks form.
  4. Stir in the vanilla and almond extracts.
  5. Spread the mixture evenly into a prepared tube pan.
  6. Place the pan in the oven and turn the oven off. Leave the torte to sit overnight.
Finishing
  1. The next morning, run a knife along the edges of the pan and unmold the torte onto a serving dish.
  2. Whip the cream, sugar, and vanilla bean paste together until light and fluffy, then spread over the cooled torte.
  3. Garnish with orange zest if desired.

Notes

Store any leftovers wrapped in the refrigerator. Allow to sit at room temperature before serving to maintain texture.
