Preparation
- Preheat your oven to 375 degrees F (190 degrees C).
- Line a baking sheet with parchment paper.
- Place the tortillas flat on a clean surface; distribute the roast beef and shredded cheese evenly on each tortilla, leaving about a 1-inch edge.
- Carefully roll each tortilla from the bottom up, folding the sides in to securely lock in the fillings.
- Brush the rolled tortillas with melted butter and sprinkle with garlic powder, onion powder, and dried parsley.
- Place seam-side down on the prepared baking sheet.
Baking
- Bake for 12 to 15 minutes until golden-brown and cheese is melted.
Making the Au Jus
- In a saucepan, combine beef broth, Worcestershire sauce, soy sauce, garlic powder, onion powder, and seasonings; simmer for 5 to 7 minutes.
Serving
- Allow roll-ups to cool slightly, then slice into bite-sized pieces.
- Serve warm with the au jus for dipping.

For a festive twist, serve with pickled jalapeƱos, quick-pickled red onions, or horseradish mayo.
