  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/3 cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 1 stick unsalted butter
  • 2 teaspoons coffee extract or 1 tablespoon instant coffee
  • 1 cup granulated sugar
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
Frosting Ingredients
  • 2 to 4 tablespoons heavy whipping cream
  • 1 1/2 teaspoons instant coffee granules
  • 2 cups powdered sugar
  • 1/3 cup unsalted butter

Method
 

Preparation
  1. Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius) and prepare an 8-inch baking dish with non-stick spray or parchment paper.
Mixing the Brownies
  1. In a microwave-safe bowl, melt the stick of butter and transfer it into a large mixing bowl.
  2. Add granulated sugar, eggs, and vanilla extract to the melted butter and mix until combined.
  3. Gradually fold in flour, cocoa powder, baking powder, and salt until the batter is smooth.
Baking
  1. Spread the batter evenly in the prepared dish and bake for 30 to 35 minutes. Use a toothpick to check doneness; brownies are ready when the toothpick comes out clean.
  2. Allow the brownies to cool completely before frosting.
Making the Frosting
  1. Dissolve the instant coffee granules in the heavy whipping cream.
  2. In another bowl, beat the unsalted butter until fluffy. Gradually add powdered sugar, then slowly mix in the coffee-infused cream until desired consistency is reached.
Frosting the Brownies
  1. Spread the frosting generously over the cooled brownies, slice, and serve.

Notes

For fudgier brownies, bake for a shorter time, allowing for some moist crumbs on the toothpick. Add nuts or chocolate chips for extra texture, and use espresso powder for a more robust coffee flavor.
