Preparation
- In a large mixing bowl, beat together butter and sugars until light and fluffy.
- Add eggs and vanilla; mix until combined.
- In another bowl, whisk together flour, baking powder, baking soda, and salt.
- Gradually add dry ingredients to wet ingredients while mixing on low speed.
- Stir in chocolate chips and sprinkles.
- Chill cookie dough in the refrigerator for at least 30 minutes.
Frosting Preparation
- For the frosting, beat softened butter until smooth, then gradually add powdered sugar until combined.
- Mix in vanilla and lemon juice, then stir in sprinkles.
- Scoop frosting onto a baking sheet and freeze until firm.
Baking
- Preheat oven to 375F (190C).
- Scoop chilled dough into balls, create an indent, fill with frosting, and reshape.
- Place on a baking sheet and bake for 12-13 minutes until lightly golden on the bottoms.
- Allow to cool on the baking sheet for 15 minutes before transferring to a cooling rack.
