Cookie Ingredients
  • 1 cup unsalted butter, softened Ensure butter is at room temperature.
  • 3/4 cup granulated sugar
  • 1/4 cup light brown sugar, firmly packed
  • 2 large eggs, room temperature preferred
  • 1 teaspoon vanilla extract or imitation vanilla
  • 4 cups cake flour (or 3 2/3 cups all-purpose flour) Cake flour gives cookies a lighter texture.
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon table salt
  • 2/3 cup mini chocolate chips
  • 1/3 cup semisweet chocolate chips
  • 1/3 cup white chocolate chips
  • 3 tablespoons sprinkles or jimmies
Frosting Ingredients
  • 6 tablespoons salted butter, softened (or unsalted with salt added) Ensure butter is at room temperature.
  • 1 1/2 cups powdered sugar
  • 1/2 teaspoon vanilla extract or imitation vanilla
  • 1/2 teaspoon lemon juice
  • 2 tablespoons sprinkles or jimmies

Method
 

Preparation
  1. In a large mixing bowl, beat together butter and sugars until light and fluffy.
  2. Add eggs and vanilla; mix until combined.
  3. In another bowl, whisk together flour, baking powder, baking soda, and salt.
  4. Gradually add dry ingredients to wet ingredients while mixing on low speed.
  5. Stir in chocolate chips and sprinkles.
  6. Chill cookie dough in the refrigerator for at least 30 minutes.
Frosting Preparation
  1. For the frosting, beat softened butter until smooth, then gradually add powdered sugar until combined.
  2. Mix in vanilla and lemon juice, then stir in sprinkles.
  3. Scoop frosting onto a baking sheet and freeze until firm.
Baking
  1. Preheat oven to 375F (190C).
  2. Scoop chilled dough into balls, create an indent, fill with frosting, and reshape.
  3. Place on a baking sheet and bake for 12-13 minutes until lightly golden on the bottoms.
  4. Allow to cool on the baking sheet for 15 minutes before transferring to a cooling rack.

Notes

These cookies can be served warm or at room temperature. Try pairing them with a glass of cold milk or a warm cup of coffee.
