  • 1 cup heavy whipping cream, whipped to stiff peaks
  • 1 can (20 oz) crushed pineapple, drained well
  • 1 can (15 oz) fruit cocktail, drained
  • 1 jar (10 oz) maraschino cherries, drained and halved
  • 1/2 cup chopped walnuts (optional) Can be omitted for nut-free version.
  • 1/2 tsp vanilla extract
  • 1 pinch salt

Preparation
  1. Begin by draining the pineapple, fruit cocktail, and cherries thoroughly. Press gently to remove excess liquid.
  2. In a large bowl, beat the softened cream cheese and granulated sugar until smooth and fluffy.
  3. Whip the heavy cream to stiff peaks and gently fold it into the cream cheese mixture.
  4. Add in the drained fruits, walnuts, vanilla extract, and a pinch of salt, folding everything together until well combined.
  5. Spread the mixture evenly into a greased or parchment-lined 8x8-inch dish.
  6. Cover tightly and freeze for 4 to 6 hours, or until firm.
  7. When serving, let it sit at room temperature for 5 to 10 minutes before slicing into squares.

Notes

This frozen fruit salad is versatile and can be paired with other dishes. For a tropical twist, consider adding a splash of coconut extract or substituting the heavy cream with Greek yogurt.
