Preparation
  1. Preheat your waffle iron so it’s hot and ready — a good, hot surface will give you crisp edges without drying the center.
  2. In a medium bowl, whisk together the flour, cocoa powder, granulated sugar, brown sugar, baking powder, and salt until well combined.
  3. In another bowl, beat the eggs lightly, then whisk in the melted butter, milk, and vanilla.
Cooking
  1. Pour the wet ingredients into the dry and stir until just combined; a few small lumps are fine. Fold in the mini chocolate chips.
  2. Lightly grease the waffle iron with butter or nonstick spray. Spoon or pour the batter onto the iron, close the lid, and cook until steam slows and the waffle is set — usually 3–5 minutes, depending on your machine.
  3. Remove carefully and let rest on a wire rack briefly so the steam doesn’t soften the crisp edges.
Serving
  1. Serve warm with a dusting of powdered sugar, a scoop of vanilla ice cream, or a drizzle of warm chocolate or caramel sauce.

Notes
