Ingredients
  

Pasta and Protein
  • 200 g spaghetti or pasta of your choice
  • 200 g peeled shrimp Use the freshest shrimp available.
Vegetables and Flavorings
  • 150 g sliced mushrooms Slice uniformly for even cooking.
  • 3–4 cloves garlic, finely chopped Do not let garlic brown.
  • 2 tablespoons fresh parsley, chopped Add for freshness before serving.
Cooking Essentials
  • 3 tablespoons extra virgin olive oil Use good quality for best flavor.
  • a pinch chili flakes (optional) Adds a slight heat.
  • to taste salt and black pepper
  • 1/2 lemon Juice of 1/2 lemon (optional) Enhances overall flavor.

Method
 

Preparation
  1. Boil pasta in salted water until al dente. Reserve 1/2 cup of the cooking water and drain the pasta.
Cooking
  1. Heat olive oil in a large skillet over medium heat. Add garlic and chili flakes if using, and sauté for about 30 seconds until fragrant.
  2. Add shrimp and cook for 2–3 minutes until pink.
  3. Add mushrooms and sauté for another 4–5 minutes until soft and golden.
  4. Add the cooked pasta to the skillet and mix well. If necessary, add a splash of the reserved cooking water to create a smooth sauce.
  5. Season with salt, pepper, and fresh parsley. Add a squeeze of lemon for extra freshness if desired.
Serving
  1. Serve hot with a drizzle of olive oil and grated cheese if desired. Perfect with crusty bread for dipping in the sauce.

Notes

Cool the pasta to room temperature within an hour and transfer to an airtight container. Refrigerate for up to 2 days. To reheat, gently warm in a skillet with a splash of water or olive oil.
