Ingredients
  

For the Pie Filling
  • 2.5 pounds tart apples (such as Granny Smith) Choose a mix of tart and sweet apples for best flavor.
  • 2/3 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1 tablespoon fresh lemon juice
For the Custard
  • 3 large eggs
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • a pinch salt
For the Pie Crust
  • 1 pre-made pie crust (9-inch) preferably homemade for an artisanal touch

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Peel, core, and slice the apples into thin wedges.
  3. In a mixing bowl, toss the apple slices with the sugar, cinnamon, nutmeg, and lemon juice.
  4. In a separate bowl, whisk together the eggs, heavy cream, vanilla extract, and a pinch of salt.
  5. Roll out the pre-made pie crust on a floured surface.
Assembly
  1. Layer the spiced apples over the crust.
  2. Pour the custard mixture over the apples.
Baking
  1. Bake in the preheated oven for 45-50 minutes until golden brown and the custard has set.
  2. Let the pie cool on a wire rack.

Notes

Serve warm or at room temperature with whipped cream or vanilla ice cream. Cover and store the pie in the refrigerator for 3-4 days, or freeze for longer storage.
