Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, blend 1/2 cup softened butter, 1/2 cup vegetable oil, and 1 cup brown sugar until smooth and fluffy.
- Add in 1 egg and 1 tsp vanilla, mixing thoroughly.
- Gradually incorporate 2 1/2 cups flour, 2 tsp cinnamon, 1/2 tsp baking soda, 1/2 tsp baking powder, and 1/2 tsp salt until just combined.
Streusel Topping
- In a separate bowl, mix 1/4 cup softened butter, 1/4 cup brown sugar, 1/3 to 1/2 cup flour, 1/2 tsp cinnamon, and a pinch of salt for the streusel topping until crumbly.
Baking
- Use a large cookie scoop to form balls of dough on a lined baking sheet.
- Make an indent in each cookie and fill it with the streusel topping.
- Bake for 10-12 minutes until golden.
Icing
- For icing, mix 1/2 cup powdered sugar, 1 tbsp milk, and a splash of vanilla until smooth.
- Drizzle the icing over the cookies once slightly cooled.
Notes
Store cooled cookies in an airtight container at room temperature for up to 3 days. For longer storage, freeze on a tray and then transfer to a sealed bag for up to 3 months. Thaw at room temperature and warm briefly in a low oven for that fresh-baked feeling.
