Ingredients
  

For the cookies
  • 1/2 cup softened butter Room temperature
  • 1/2 cup vegetable oil
  • 1 cup brown sugar Packed
  • 1 large egg Room temperature
  • 1 tsp vanilla
  • 2 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 1/2 cups flour (325 grams)
For the streusel
  • 1/4 cup softened butter Room temperature
  • 1/4 cup brown sugar Packed
  • 1/3 to 1/2 cup flour Adjust until crumbly
  • 1/2 tsp cinnamon
  • pinch salt
For the icing
  • 1/2 cup powdered sugar
  • 1 tbsp milk
  • splash vanilla

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, blend 1/2 cup softened butter, 1/2 cup vegetable oil, and 1 cup brown sugar until smooth and fluffy.
  3. Add in 1 egg and 1 tsp vanilla, mixing thoroughly.
  4. Gradually incorporate 2 1/2 cups flour, 2 tsp cinnamon, 1/2 tsp baking soda, 1/2 tsp baking powder, and 1/2 tsp salt until just combined.
Streusel Topping
  1. In a separate bowl, mix 1/4 cup softened butter, 1/4 cup brown sugar, 1/3 to 1/2 cup flour, 1/2 tsp cinnamon, and a pinch of salt for the streusel topping until crumbly.
Baking
  1. Use a large cookie scoop to form balls of dough on a lined baking sheet.
  2. Make an indent in each cookie and fill it with the streusel topping.
  3. Bake for 10-12 minutes until golden.
Icing
  1. For icing, mix 1/2 cup powdered sugar, 1 tbsp milk, and a splash of vanilla until smooth.
  2. Drizzle the icing over the cookies once slightly cooled.

Notes

Store cooled cookies in an airtight container at room temperature for up to 3 days. For longer storage, freeze on a tray and then transfer to a sealed bag for up to 3 months. Thaw at room temperature and warm briefly in a low oven for that fresh-baked feeling.
