Ingredients
  

For the Cake
  • 2 3/4 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 1/2 tsp ground cinnamon
  • 1 tbsp ground cinnamon
  • 2 tsp ground ginger
  • 1 tsp ground nutmeg
  • 1/2 tsp ground cloves
  • 1/4 tsp allspice
  • 1 1/4 cups sour cream
  • 3/4 cup granulated sugar
  • 3/4 cup light brown sugar
  • 1/2 cup unsalted butter softened
  • 1/2 cup canola oil
  • 1/2 cup molasses
  • 3 large eggs
  • 3 1/2 tsp vanilla extract
  • 1/4 cup very hot water
For the Frosting
  • 12 oz block-style cream cheese
  • 1/2 cup unsalted butter
  • 1/4 cup light brown sugar
  • Ground cinnamon Ground cinnamon to taste
  • 7 - 8 cups powdered sugar
  • 2 - 3 tsp heavy cream

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a cake pan.
  2. In a large mixing bowl, whisk together all-purpose flour, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, cloves, and allspice.
  3. In a separate bowl, combine sour cream, granulated sugar, brown sugar, softened butter, canola oil, molasses, eggs, vanilla extract, and hot water. Mix until smooth.
  4. Gradually mix the dry ingredients into the wet mixture until the batter is smooth.
  5. Pour the batter into the prepared cake pan and bake for 30 to 35 minutes, until a toothpick comes out clean.
Frosting
  1. Beat together cream cheese and unsalted butter until smooth.
  2. Blend in brown sugar and cinnamon, then gradually add powdered sugar, adjusting with heavy cream to achieve a spreadable consistency.
  3. Once the cake is cooled, apply the frosting as desired.

Notes

For a deeper spice flavor, let the cake rest overnight before serving. You can also experiment with different frostings or add-ins.
