Preparation
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together the flour, ginger, cinnamon, cloves, baking soda, salt, and cocoa powder until well blended.
- In a separate large bowl, cream together the granulated sugar, brown sugar, and softened butter until light and fluffy.
- Beat in the egg and molasses until well combined.
- Gradually mix in the dry ingredients until a dough forms.
- Roll the dough into balls and then roll them in powdered sugar until coated.
Baking
- Place the balls on a baking sheet lined with parchment paper, ensuring they have enough room to spread.
- Bake for 8-10 minutes, until the edges are firm but the centers are still soft.
- Let them cool on the baking sheet for a couple of minutes before transferring to a wire rack.
Notes
Store cookies in an airtight container at room temperature for up to a week. They can also be frozen for up to three months.
