Preparation of Cookie Dough
- In a mixing bowl, combine all-purpose flour, baking powder, powdered sugar, and lemon zest.
- Add cubed butter and rub it into the flour mixture until it resembles coarse breadcrumbs.
- Crack in the eggs and mix until the dough is just combined.
- Using cookie cutters, stamp out shapes from the dough and place them onto a tray lined with parchment paper.
Baking
- Bake the cookies at 180°C (360°F) for about 15 minutes, or until the edges are golden.
Making the Icing
- Mix powdered sugar with water until smooth and lump-free.
- Divide icing into four bowls and tint with food coloring.
Decorating Cookies
- Use piping bags to decorate the cookies with the colored icing.
- Allow sections of icing to set briefly for sharp lines.
- Once set, arrange the cookies on a platter.
Notes
