Ingredients
  

For the Cookie Dough
  • 300 grams all-purpose flour
  • 2 grams baking powder about 1/2 tsp
  • 100 grams powdered sugar
  • 1 unit lemon zest from 1 lemon
  • 100 grams butter, cubed
  • 2 unit eggs
For the Glaze
  • 250 grams powdered sugar for glazing
  • 40 ml water to mix with powdered sugar
  • to taste unit pink food coloring
  • to taste unit purple food coloring
  • to taste unit green food coloring
  • to taste unit blue food coloring

Method
 

Preparation of Cookie Dough
  1. In a mixing bowl, combine all-purpose flour, baking powder, powdered sugar, and lemon zest.
  2. Add cubed butter and rub it into the flour mixture until it resembles coarse breadcrumbs.
  3. Crack in the eggs and mix until the dough is just combined.
  4. Using cookie cutters, stamp out shapes from the dough and place them onto a tray lined with parchment paper.
Baking
  1. Bake the cookies at 180°C (360°F) for about 15 minutes, or until the edges are golden.
Making the Icing
  1. Mix powdered sugar with water until smooth and lump-free.
  2. Divide icing into four bowls and tint with food coloring.
Decorating Cookies
  1. Use piping bags to decorate the cookies with the colored icing.
  2. Allow sections of icing to set briefly for sharp lines.
  3. Once set, arrange the cookies on a platter.

Notes

Store cookies in an airtight container to keep them fresh. Don’t overwork the dough to maintain softness. Experiment with different cookie cutter shapes and flavors.
