Dry Ingredients
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder Use high-quality cocoa powder for the best flavor.
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
Wet Ingredients
  • 1/2 cup butter, melted Alternatively, use a neutral oil.
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup boiling water Carefully stir into the batter.

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a large bowl, mix together the flour, sugar, cocoa powder, baking powder, and salt.
  3. Add the melted butter, eggs, and vanilla extract to the dry ingredients. Mix until combined.
  4. Carefully stir in the boiling water. The batter will be thin, but that’s okay!
  5. Pour the batter into the prepared pan.
Baking
  1. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out mostly clean, a few moist crumbs are fine.
  2. Let it cool in the pan for 10 minutes, then turn it out onto a wire rack to cool completely.

Notes

Serve delicious on its own or topped with ice cream or whipped cream. Store in an airtight container at room temperature for up to 3 days.
