Ingredients
  

Brownie Base
  • ½ cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ teaspoon peppermint extract (optional)
  • ½ cup all-purpose flour
  • ¼ teaspoon salt
  • Green gel food coloring
  • 1–2 teaspoons matcha powder or pistachio pudding mix
Cookie Dough Filling
  • ½ cup unsalted butter, softened
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour, heat-treated Heat-treat flour to eliminate bacteria.
  • ½ cup mini chocolate chips
Glaze
  • 1 cup white chocolate chips or candy melts
  • ¼ cup heavy cream
  • Green gel food coloring
  • 1 teaspoon pistachio pudding powder or matcha powder (optional)
  • Mini chocolate chips for topping

Method
 

Preparation of Brownie Base
  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together the melted butter and sugar until combined.
  3. Gently add the eggs and vanilla; mix well.
  4. Mix in the flour, salt, green food coloring, and matcha or pistachio powder until smooth.
Baking the Brownies
  1. Pour the batter into a lined square pan and bake for 18–20 minutes.
  2. Allow the brownies to cool completely before cutting into thick round discs.
Preparing Cookie Dough Filling
  1. In another bowl, cream together the softened butter, brown sugar, and granulated sugar until fluffy.
  2. Incorporate the milk and a hint more of vanilla.
  3. Fold in the heat-treated flour and mini chocolate chips.
  4. Shape the dough into half-spheres and freeze for 20 minutes.
Assembly
  1. Place each chilled cookie dough dome onto a brownie base, pressing gently.
Preparing the Glaze
  1. Heat the heavy cream until warm, then pour it over the white chocolate chips and stir until smooth.
  2. Add green food coloring and optional pistachio or matcha powder.
  3. Spoon the glaze over each dome, allowing it to cascade down the sides.
  4. Sprinkle with mini chocolate chips and chill for 15–20 minutes until set.

Notes

Serve these bites on a beautiful plate with fresh mint or powdered sugar. They pair wonderfully with vanilla ice cream.
