Preparation of Brownie Base
- Preheat the oven to 350°F (175°C).
- In a bowl, whisk together the melted butter and sugar until combined.
- Gently add the eggs and vanilla; mix well.
- Mix in the flour, salt, green food coloring, and matcha or pistachio powder until smooth.
Baking the Brownies
- Pour the batter into a lined square pan and bake for 18–20 minutes.
- Allow the brownies to cool completely before cutting into thick round discs.
Preparing Cookie Dough Filling
- In another bowl, cream together the softened butter, brown sugar, and granulated sugar until fluffy.
- Incorporate the milk and a hint more of vanilla.
- Fold in the heat-treated flour and mini chocolate chips.
- Shape the dough into half-spheres and freeze for 20 minutes.
Assembly
- Place each chilled cookie dough dome onto a brownie base, pressing gently.
Preparing the Glaze
- Heat the heavy cream until warm, then pour it over the white chocolate chips and stir until smooth.
- Add green food coloring and optional pistachio or matcha powder.
- Spoon the glaze over each dome, allowing it to cascade down the sides.
- Sprinkle with mini chocolate chips and chill for 15–20 minutes until set.
Notes
Serve these bites on a beautiful plate with fresh mint or powdered sugar. They pair wonderfully with vanilla ice cream.
