Ingredients
  

For the truffles
  • 36 cookies 36 Oreo cookies, regular filling, crushed into fine crumbs
  • 8 ounces 8 ounces cream cheese, softened to room temperature Make sure the cream cheese is at room temperature for easier mixing.
  • 12 ounces 12 ounces green candy melts or green colored white chocolate
  • 1-2 teaspoons 1 to 2 teaspoons coconut oil, optional for thinning the coating Add more if the coating is too thick.
  • Red heart sprinkles for decorating
  • Green sanding sugar or white chocolate for drizzle, optional
  • Pinch of sea salt, optional to balance sweetness
  • Lollipop sticks, optional if you want to turn them into pops Use for easy grabbing during serving.

Method
 

Preparation
  1. Crush a full package of Oreo cookies in a food processor or zip bag until they are fine crumbs.
  2. In a bowl, add the softened cream cheese to the crushed Oreos and mix until you have a thick dough.
  3. Roll the mixture into 1-inch balls and place them on a parchment-lined baking sheet. Chill for 20-25 minutes in the fridge or 10 minutes in the freezer.
Coating
  1. Melt the green candy melts in a microwave-safe bowl. If the mixture is too thick, stir in coconut oil to thin it out.
  2. Dip each chilled ball into the melted candy using a fork, tap off the excess, and set back on the parchment.
  3. Add a red heart sprinkle on top while the coating is still wet.
  4. Let the truffles set at room temperature, then refrigerate for at least 10 minutes to firm them up.

Notes

Store the truffles in an airtight container in the refrigerator for up to one week. They can be frozen for up to three months; thaw in the fridge before enjoying.
